Ingredients
- 1½ lbs ground beef or ground turkey or plant-based protein
- 2 tablespoons LL Fiery Soul Seasoning (adjust to your heat preference)
- 1 bell pepper (red or green), diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (15 oz) black beans, drained
- 1 can (14 oz) fire-roasted diced tomatoes
- 1 cup frozen corn
- 2 tablespoons olive oil
- Shredded cheese, sour cream, and green onions for topping
- Rice or cornbread for serving
Instructions
- Brown the meat. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain excess fat.
- Season boldly. Sprinkle LL Fiery Soul Seasoning over the meat and stir to coat. Let it cook 1 minute to bloom the spices.
- Add the vegetables. Add onion, bell pepper, and garlic. Cook 4–5 minutes until softened.
- Build the skillet. Stir in black beans, fire-roasted tomatoes, and corn. Reduce heat to medium and simmer 8–10 minutes until everything is heated through and flavors meld.
- Top and serve. Serve over rice or with cornbread. Top with shredded cheese, a dollop of sour cream, and sliced green onions.
