Ingredients

  • 1½ lbs ground beef or ground turkey or plant-based protein
  • 2 tablespoons LL Fiery Soul Seasoning (adjust to your heat preference)
  • 1 bell pepper (red or green), diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, drained
  • 1 can (14 oz) fire-roasted diced tomatoes
  • 1 cup frozen corn
  • 2 tablespoons olive oil
  • Shredded cheese, sour cream, and green onions for topping
  • Rice or cornbread for serving

Instructions

  1. Brown the meat. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain excess fat.
  2. Season boldly. Sprinkle LL Fiery Soul Seasoning over the meat and stir to coat. Let it cook 1 minute to bloom the spices.
  3. Add the vegetables. Add onion, bell pepper, and garlic. Cook 4–5 minutes until softened.
  4. Build the skillet. Stir in black beans, fire-roasted tomatoes, and corn. Reduce heat to medium and simmer 8–10 minutes until everything is heated through and flavors meld.
  5. Top and serve. Serve over rice or with cornbread. Top with shredded cheese, a dollop of sour cream, and sliced green onions.
