Healing Chicken Noodle Soup Recipe

Salt-Free & Soulful | Serves 4–6

Ingredients

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 6 cups low-sodium or homemade chicken broth

  • 2 cups cooked shredded chicken (rotisserie works well)

  • 1½ cups egg noodles or preferred pasta

  • ½ teaspoon turmeric

  • ½ teaspoon ground ginger or fresh grated ginger

  • Black pepper, to taste

Directions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion, garlic, carrots, and celery. Sauté for 4–5 minutes until softened and fragrant.

  3. Pour in chicken broth and bring to a gentle boil.

  5. Add noodles and simmer for 8–10 minutes, or until noodles are tender.
