Ingredients

  • 2 large bunches fresh collard greens, stems removed and leaves chopped

  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken or vegetable broth
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • Red pepper flakes to taste (optional)
  • Turkey neck or smoked turkey leg (optional, for traditional flavor)

Instructions

  1. Prep the greens. Wash collard greens thoroughly. Remove tough stems by folding each leaf in half and pulling the stem away. Stack leaves and slice into 1-inch strips.
  2. Build the base. Heat olive oil in a large pot over medium heat. Add onion and cook 5 minutes until softened. Add garlic and cook 1 more minute.
  3. Season the pot. Add Salt Free Soul Seasoning and smoked paprika. Stir to coat the onions and garlic — let the spices bloom for 30 seconds.
  4. Add the greens. Add collard greens in batches, stirring as they wilt down. Pour in broth and add turkey neck or smoked turkey if using.
  5. Low and slow. Bring to a boil, then reduce heat to low. Cover and simmer 30–40 minutes, stirring occasionally, until greens are tender and flavorful.
  6. Finish with vinegar. Stir in apple cider vinegar just before serving — it brightens all the flavors beautifully.
