Roasted to Perfection
These Mediterranean roasted vegetables are the kind of dish that converts even the most reluctant veggie eaters. Tossed in olive oil and LL Garlic Soul Seasoning, then roasted until caramelized and tender β every bite is packed with flavor.

Ingredients
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 1 cup kalamata olives
- 2 tablespoons LL Garlic Soul Seasoning
- 3 tablespoons olive oil
- Fresh basil and feta cheese for serving
Instructions
- Preheat oven to 425Β°F and line a large baking sheet with parchment paper.
- Season the vegetables. Toss all vegetables with olive oil and LL Garlic Soul Seasoning until evenly coated.
- Spread and roast. Arrange in a single layer on the baking sheet. Roast 30β35 minutes, tossing halfway, until edges are caramelized.
- Finish and serve. Top with fresh basil and crumbled feta. Serve as a side, over rice, or stuffed in pita bread.
