The Ultimate Soul Food Mac & Cheese
No soul food spread is complete without a proper mac and cheese. This baked version is rich, creamy, and seasoned throughout with Heart and Soul Seasoning — because great mac and cheese is about so much more than just the cheese.
⏱ Cook Time: 1 hour | 🍽 Servings: 8–10
Ingredients
- 1 lb elbow macaroni
- 2 tablespoons Heart and Soul Seasoning
- 4 tablespoons butter
- ¼ cup all-purpose flour
- 3 cups whole milk
- 1 cup heavy cream
- 3 cups sharp cheddar, shredded
- 1 cup gruyere or gouda, shredded
- 2 eggs, beaten
- 1 cup sour cream
Instructions
- Cook the pasta. Boil macaroni until just under al dente. Drain and set aside.
- Make the roux. Melt butter in a large pot over medium heat. Whisk in flour and cook 2 minutes. Slowly whisk in milk and cream until smooth and thickened, about 5 minutes.
- Season and add cheese. Stir in Heart and Soul Seasoning. Remove from heat and fold in 2 cups of cheddar and all the gruyere until melted.
- Combine. Stir in eggs, sour cream, and cooked pasta. Mix well.
- Bake. Pour into a greased 9x13 baking dish or oven safe cast iron skillet. Top with remaining cheddar if using. Bake at 350°F for 30–35 minutes until bubbly and golden.
- Rest and serve. Let sit 10 minutes before serving.
Coach LL's Tips
- Always shred your own cheese — pre-shredded cheese has coatings that prevent smooth melting.
- Don’t skip the eggs — they give the mac that classic soul food custard texture.
- This dish is perfect for Sunday dinners, holidays, and potlucks.
