The Breakfast That Hugs You Back
Some mornings call for something warm, nourishing, and deeply satisfying. Ingredients
- 3 cups old-fashioned rolled oats
- 2 tablespoons LL Warm Soul Blend
- 1 teaspoon baking powder
- 2 cups milk of choice (dairy, oat, or almond)
- 2 eggs
- ¼ cup maple syrup or honey
- 3 tablespoons melted butter or coconut oil
- 1 teaspoon vanilla extract
- 1½ cups diced apples or ripe bananas (or both!)
- ½ cup chopped pecans or walnuts
- ½ cup raisins or dried cranberries (optional)
Instructions
- Preheat oven to 375°F. Grease an 8x8 or 9x9 baking dish.
- Mix the dry ingredients. In a large bowl, combine oats, LL Warm Soul Blend, and baking powder. Stir well.
- Mix the wet ingredients. In a separate bowl, whisk together milk, eggs, maple syrup, melted butter, and vanilla extract.
- Combine. Pour the wet mixture into the dry ingredients and stir to combine. Fold in apples (or bananas), nuts, and dried fruit if using.
- Bake. Pour into the prepared baking dish and spread evenly. Bake 35–40 minutes until the top is golden and the center is set.
- Serve. Let cool 5 minutes. Serve warm with a drizzle of maple syrup, a splash of warm milk, or a dollop of almond butter.
